Add custom AppImage workflow
...
This would allow the official releases to include an AppImage without requiring the maintainers to fight `electron-builder` bugs or change the core build configuration. The workflow would:
1. Run on `ubuntu-latest` in the existing release pipeline.
2. Execute a shell script (which I can provide) that replicates my manual build steps.
3. Upload the resulting `.AppImage` to the release assets alongside the Zip and (soon) Flatpak.
### Additional context
- I have verified the manually built AppImage runs correctly on modern systems without FUSE2 errors.
